I previously ordered both silicone and natural bannetons, but I needed additional ones to bake all four of my sourdough boules at the same time. I appreciate the size of these bannetons; they're smaller than my others, which helps maintain the shape of my sourdough boules and prevents them from flattening as the dough relaxes during proofing. The only minor drawback is their color; they appear white, almost as if painted, rather than having the natural rattan look. However, this isn’t a concern for me since the dough rests on the liners rather than directly on the baskets.

If you missed the huge boom in home breadmaking during the lockdowns, it's not too late! Pick up a set of these baskets and get started. Breadmaking is one of the cheapest hobbies to pick up, the learning curve is fairly short, and the payoff is almost immediate. Even if your loaves aren't perfect, they'll still taste great. America's Test Kitchen evaluated a bunch of different types of proofing baskets--silicone, rattan, bagasse, plastic, etc.--and concluded that rattan was the best, and I very much agree. I've used rattan for over 20 years, including for many of my catering jobs, and I've tried some of the others too. Silicone doesn't breathe at all, so the dough kind of "sweats", which negatively affects the texture. Bagasse does something similar, plus it's less durable. Plastic also doesn't breathe and seems to hold onto odors more than rattan. Rattan just has the right combination of breathability, strength, flexibility, etc. If you're on the fence, just imagine the smell of fresh-baked bread, then grab a set of these baskets and get going. The only thing you'll regret is that you waited this long for fresh, hot bread.

these banneton baskets are the perfect shape and size for proofing my sour dough breads! I leave them to rise in these, and the breads come out amazing! They are made a great sturdy material that is super easy to clean. It can be used with or without the liner! Once your prepare it for your baking, it makes it so easy for your dough to come out! I highly recommend using these baskets for all your sour dough needs! They are made from a sturdy rattan material, allowing excellent moisture absorption and great airflow, to help make your beautiful sourdoughs! these are not to be used in the over to bake the sourdoughs, only to proof the doughs in! I've made sour doughs without these, and you cant compare! These are a game changer of how the dough rises! I recommend buying these, if you are going to make sour doughs! good luck!

Each is sufficient for a 1-2 lb loaf of bread.They smell a bit of glue when you take them out of the box. At first, I thought it was latex paint, but I scratched the surface on the bottom of the bowl and the rattan is raw as it should be. I suspect the glue smell will fade with time.Each bowl comes with a cover. The cover is NOT for covering the dough as it rises (as shown in the listing), but rather for covering the banneton if you don't want the spiral to show. If you use them as designed, make sure to put the seams in the cover facing the banneton, not facing the bread dough.DO NOT WASH. It will ruin the banneton. Brush flour or dried dough out with a stiff brush (not included) You can wash the covers. They are 100% cotton (so watch out for shrinkage if you wash in hot water).All in all, a decent product at a reasonable price.
