The major difference between just sitting your meats on the rack/grate is that using a rotisserie basket allows your meats to remain moist.Heat and charcoal flavor doesn’t change meat is still inside the grill but movement of the meat increases flavor and believe it or not it cooks faster.Make it part of your outdoor cooking equipment arsenal.
