This 5lb bag of green coffee beans from Yirgacheffe, Ethiopia offers a delicate and dynamic cup. Coffee in Yirgacheffe is grown at very high altitudes, by smallholder farmers, this lot specifically was grown between 1,950 and 2,200 MASL. Specialty grade Arabica beans grown at this elevation by farmers with the rich histoy of coffee production results in a dyanimic cup of coffee with notes of Lemon/Lime, Sugarcane, and Oolong Tea. Once picked, coffee cherries are delivered to the factory where they’re sorted to remove immatures, insect damaged, and unripe cherries. After sorting quality cherry, it’s then pulped and fermented for 24-48 hours to loosen mucilage for the washing process. Once it’s been washed clean the parchment coffee is taken to raised beds where it will sun dry for roughly 10 days. Ethiopia is believed to be the birthplace of arabica coffee and it shows, coffee grown throughout Ethiopia has a distinct profile and typically very high cup score.
